It turns out all I needed to do was run Seagate DiskWizard - Set Up New Drive - after I set up the Raid 0 array.

I combined the 2 new 250 GB drives into a second Raid 0 array and instead of a 500 GB capacity I see instead a 232 GB drive. I want to remove the original 160 GB drives and replace them with 2 more 250 GB drives. I have two more quick questions.
